Domaine Chandon Shiraz 2012 Red Wine
Domaine Chandon was founded in 1986 by Mot & Chandon to produce high-quality sparkling and still wines that reflect the Australian terroir in their aromas, flavours, and structure. Domaine Chandon wines are recognised for their style and quality in Australia and 16 other countries after 20 years.
The Heathcote region of Victoria is blessed with rich, red Cambrian soils that are renowned for producing shiraz grapes with exceptional flavour concentration. The wines that result are intense and vibrant.
Prior to fermentation, individual parcels were destemmed, crushed, chilled, and cold-soaked for three days to gently extract colour and flavour from the skins. To build the body of the wine, various techniques were used during fermentation, including regular pump-overs and cap plunging. Following primary fermentation, individual batches were pressed and settled in stainless steel tanks before being transferred to oak barrels for malolactic fermentation. The majority of the oak used was French barriques; approximately 15% were new oak barrels, with the remainder one to two years old. Before bottling, the individual vineyard parcels were assessed, blended, and filtered after about 18 months in oak.
